INGREDIENTS

  • 2 ounces cream cheese, softened

  • ¼ cup finely shredded sharp Cheddar cheese (1 oz.)

  • 4 thin slices of raw bacon

  • ¼ cup finely chopped scallion

  • 5 Cherry Tomatoes

  • 2 teaspoons chopped fresh dill

  • 1/4 teaspoon garlic powder

  • 1/8 teaspoon onion powder

  • salt and pepper to taste

  • 4 large jalapeño peppers, halved lengthwise (about 1 1/2 oz. each)

STEPS

  • A LITTLE PREP: First, cut the Jalapeño stem off each pepper. Try to stay as close to the stem as possible since the edge will help create a boat to keep the filling inside. Then cut the pepper open lengthwise. Have a paper towel or alcohol wipes on standby because the oils from inside the pepper membranes can stay on your hands (even after you wash your hands).

  • Take out all the membrane and seeds from the Jalapeño peppers. Use a small spoon to cut slightly around the membrane then pull it from the pepper. Leave seeds in the pepper increases the heat.... so if you like your poppers HOT, leave a few seeds.

  • For those that don't want any spice at all, sweet peppers are the perfect substitute.

  • Setting the peppers aside, chop your scallions and fresh dill

  • Mix the cream cheese, cheddar cheese, garlic powder, onion powder, scallions, dill, salt, and pepper in a medium size bowl. Room temperature cream cheese works the best. If you’re using cold cream cheese, place it in a microwaveable bowl for about 15-20 seconds to warm it up slightly. This will allow you to mix it easier.

  • Spoon the cream cheese filling into the Jalapeños with a small spoon. Use just enough to fill the jalapeno pepper without overfilling. Overfilling the pepper with cream cheese will cause it to spill out when wrapping it with bacon.

  • Preheat the air fryer by turning it to 350 for 3 minutes.

  • Take the thinly sliced bacon and cut each slice into two, then carefully wrap the pepper with the bacon.

  • Place the air fryer bacon-wrapped stuffed Jalapeños into the air fryer in a single layer. Do not let any of them touch each other or it can interfere with the bacon cooking evenly.

  • Cook at 350 for 14-16 minutes until bacon is fully cooked.

  • Plate the peppers when they are done and add cherry tomatoes to the plate. The tomatoes are a good source to cleanse your palette between peppers and they can enhance the flavor.

  • Enjoy.


Air fryers are very popular and are a great tool for cooking in-cab recipes, however, there are things to consider. Storage, for one. Be sure that you have enough storage space to securely and safely store appliances when they are not in use. Also, be sure your inverter can handle the wattage. Some air fryers require at least 1600 watts or more to function so be sure your electrical system can handle the task. Also, when using an air fryer in-cab, use the disposable liners when cooking. It will make clean-up much easier.
